Fire and Ice Cajun Chicken Sticks, my mother loved to get the whole family together on Christmas Eve. We would gather around the tree and say a prayer and then sing Happy Birthday to Jesus where she would bring out a cake with a candle that one of the grandkids got to blow out. Then the kids could do the tree. We did it this way so everyone could be at home or with other family on Christmas morning.There was so much excitement and activity that she did not try to have a big Christmas dinner. Instead she would have a big spread of what I call finger foods. She would cook for days putting the Christmas Eve meal together and we would all bring our best to add to it.Tonight’s meal is something my mother loved. We grilled up some Fire & Ice Cajun Chicken Sticks, with a Fire & Ice dipping sauce, Wings o’ Fire with a good blue cheese dipping sauce and a batch of Teriyaki Shrimp Skewers.

Smokin’ Hot Meatloaf
Today has been a long week and comfort food was mandatory. For us that also means something on the barbecue. We both love meatloaf and it sounded like the perfect plan. Served with Patti’s garlic mashed potatoes, of course. We picked up some nice sourdough bread, and meatloaf sandwiches will be on for tomorrow’s lunch. Ken thinks that’s the best reason to make meatloaf.We used some of Lumberjacks new “Mexican Heat” wood pellets. Mexican Heat is a wood pellet that has Red pepper chili powder mixed right in it. The red pepper chili powder is a pungent, hot chili powder with a strong bite and the flavor intensifies as it is cooked. I love the Southwestern flair it adds to all of your grilling.

Pizza Fatty

We have done a few now with the Southwestern influence and one with a Hawaiian twist. I have been thinking on doing another one but I wanted to be completely different than any we have done before.For those of you that don’t know what a Fatty is let me explain. It is the ultimate meat loaf. But, instead of the ground beef that we are all used to, you use sausage and bacon. To add to this thought you stuff it with more bacon. The “Basic Fatty”.

Sweet & Sassy Stuffed Pineapple and Cajun Kick Pork Tenderloin

We love to do pork loins because they’re so versatile and reasonably priced. It’s all meat and no waste, and you can stuff them so many different ways. We’ve used our favorite recipe box stuffing mix with all kinds of different add-ins, leftover mashed potatoes with vegetables or some interesting leftovers. This time we used mild sausage, but hot sausage works really well, too.

Cajun Bacon Bombs on a Stick

With us, it has to be something smoked off the grill. A great start for anything we come up with. How about Chipotle Bacon Bombs on a Stick? We let our “Crash Test Dummies” try these out and they were a huge hit. There were no survivors…and no need for the main course. We all could have just eaten these for hours.

We love BBQ beef sandwiches with big beefy chunks of meat is a rich BBQ sauce. Tonight we used Grandville’s Gourmet Cajun BBQ Sauce. These are so rich, flavorful and simple you’ll love it and folks will sing praises to your skills as a Grill Master.We are having so much fun coming up with recipes for our shredded chuck roast. I hope the 16lbs. Ken made will be enough for all our plans! These are quick and easy, delicious and really filling, great for tailgating. Don’t know if I can call this one of our “Love a Second Time Around” recipes because we did the roast just for these recipes.

Grandville’s Bacon Cheese Burger
This week I wanted to put a different twist on our bacon cheese burger. I like the bacon in the burger. And what can be better than bacon, chipotle and cheese with some of Grandville’s Gourmet BBQ Sauce. (We just used the beef to hold it all together.)The bacon flavor just jumps out at you and the smoky flavor of the chipotle. Add beef and cheese and you’ve got a nice juicy burger. This burger is another winner. It is lip licking good.
